Not long before having to adapt to a gluten-free diet, I fell in LOVE with crepes. We have the sweetest little crepery in my area, but unfortunately they don't offer gluten-free crepes of any kind. So, I did what I always do and went to the internet to find a crepe recipe, and kept playing with adapting the ingredients until I got this lovely creation. Here's what you'll need:
-1 cup organic oats (any kind such as quick, rolled, etc, gluten-free if necessary)
-2 organic omega-3 eggs
-1 cup organic 100% grass fed whole milk (or almond or oat milk for dairy free version)
-1 tsp organic vanilla
-If you substitute a dairy-free milk, add a tablespoon of grapeseed oil to the wet mix; the fat content will help them turn golden and get slightly crispy.
This recipe can be made gluten-free, dairy-free, soy-free, and nut free. It is suitable for people on a vegetarian diet.
